Gruyere Stuffed Pretzel Rolls

Stuffed Pretzel Rolls
(Recipe makes one dozen pretzel Rolls stuffed with Gruyere Cheese)
(Can be stuffed with any hard cheese, actually!)

1 cup milk (heated to 110 degrees)
1 packet Active Dry Yeast
3 T. brown sugar
2 T. melted butter
2 ¼ cups all purpose flour
1 tsp. salt

Pour milk, yeast, and brown sugar into mixing bowl and let it sit for about 10 minutes.
Then begin to mix.  Add melted butter.  Mix.  Slowly add flour. Add salt.
Mix thoroughly.
Knead for 10 minutes.
Place kneaded dough into a greased bowl and allow to rise until double in size.

Once double in size, divide into 12 portions.
Flatten each portion and place a small block of Gruyere cheese (approx. 1" by 1" by ½")
into the middle.
Wrap dough around cheese and form into a ball... making sure that
cheese in completely surrounded by dough.

Preheat oven to 450 degrees.

Bring 1 ½ cups of water and 3 T. of Baking soda to a boil.
Dip each of your pretzel rolls into the boiling mixture with a slotted spoon.
Then place onto parchment paper on a baking sheet... or just onto a greased baking sheet.
Sprinkle coarse salt on each roll.
Bake until dark golden brown.
Brush with melted butter.

How much salt? The recipe does not say.
