Apple Harvest Cake Recipe

Apple Harvest Cake


4 cups diced apples
2 cups sugar

3 cups flour
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 tsp. nutmeg
1 cup oil (I use light olive oil, or coconut oil)
2 eggs
1 tsp. vanilla
1 cup chopped walnuts

Mix together the apples and sugar and let stand 1 hour.
Sift together the dry ingredients.  Mix together the liquids and add to the apples.  Add the dry ingredients.  Mix to combine.  Add nuts and mix.

Bake in greased and floured angel food pan, or bund pan, or 2 loaf pans.

Bake at 350 degrees for 1 hour.

Frost with butter cream or cream cheese frosting.... also good without frosting.
