Blubbery Buckle and a Summer Giveaway

First, a little explanation about the title.
My computer has a feature called "auto-correct"; where, if it thinks I am mis-spelling a word
it will automatically correct it.
So, as I was typing blueberry, I must have hit a wrong key and the computer thought
I was spelling "blubbery"!
So, from now on my Blueberry Buckle will forever be known as

Blubbery Buckle!

And as promised....another recipe!
And this one is definitely a keeper.

Cake Ingredients:
2 cups flour
2 t. baking powder
1/2 t. salt
1/4 C. butter (softened)
3/4 C. sugar
1 large egg
1/2 C. milk
1 pint blueberries

Topping Ingredients:
1/4 C. butter
3/4 C. brown sugar
1/2 C. flour
1/2 t. cinnamon
1/4 C. coursely chopped walnuts

Preheat oven to 375 degrees.
Cream butter and sugar (cake ingredients) until fluffy.   Beat in the egg.
Add dry ingredients alternating with milk. Mix.  Fold in blueberries.
Spread in greased 8 or 10 inch springform pan.
(or can be baked in a 10 inch square pan and served from the pan)

Combine topping ingredients with a fork to make a crumbly mixture.
Sprinkle over cake batter.

Bake for an hour.
Test for doneness with a toothpick.
If toothpick inserted does not come out clean, bake for another 5 minutes.

This is a delicious coffee cake type dessert that is a favorite of our family.

I hope this counts- I have been telling my sister about your blog. When we were visiting on Friday, I told her to get out her laptop so I could show it to her. I showed her your goats and turkeys - we also raise Nigerian Dwarfs and turkeys. We oohed and ahhed over your beautiful garden. Then we skipped on down to a video of Ginger and MaryAnn. I have been wanting Kune Kune pigs for the last year and always enjoy those posts. Anyway, she put you in her favorites. Leanne H.

Hi, my dear friend Susan at "From Beyond My Kitchen Window" recommended that I stop by and check out a few things.

Actually Susan is always complementing your blog, so I don't know why I haven't been by sooner!

I'm so making that blueberry coffee cake today! I have all the ingredients on hand, and the family is coming for the 4th of July! I know they'll love it!

I also see that you are having a "give-away" how lucky for me!

I've "Liked" you on FB too

I'm going to put your link to my post that I did today too!

Susan invited me to follow, and I wish I had ages ago!

It looks like you make delicious blueberry jam, I'm going to give your recipe a try. I'd also like to share my "spiced blueberry jam" recipe with you. Here's the link if you'd like to check it out!

I love your posts, I visit every day, but don't usually leave a comment. I guess that makes me a lurker! But I don't blog, and I DON'T FaceBook (gosh but I'mt ired of that), so this will have to be my entry.

Hi Bev, I love reading your blog on a regular basis but sadly rarely leave a comment so I guess I qualify as a lurker. You have kindly answered my email questions about chicken lice, groiwng sweet potatoes and most recently blueberries and japanese beetles.
Thank you for all of the time and effort you put into your wonderful blog.
One question, do you think you will ever open your blueberry patch to the public for picking?

Cathy W.
Bee Haven Bev said…
Hi Cathy...
It is our plan to some day open the big blueberry patch as a "Pick Your Own"....I am thinking that we will do this only on certain days. The plants are still young (5 years old) and need to grow some more before that day. At this point we are eating and freezing and preserving all of the berries ourselves. Someday that task will be daunting!!!
